It’s fantastic to find specialty foods that are especially unique. These products are a rare treat that identify a culture, accentuate a dish, and add another level of culinary creativity to the course of the day. The Guerzoni family of Modena has preserved the ancient craft of Mosto Cotto, or cooked grape juice. SABA is produced by slowly cooking the juice of selected biodynamic grapes (Salamino, Fortana, Trebbiano Bianco, and Lancellotta) until it attains a syrupy texture. Years ago when sugar was an expensive luxury, but grapes were plentiful. Saba was used instead of sugar. From the Chianti Hills of Tuscany, this syrup is made from an antique variety of rose called “Gallica.” Each May the rose petals are harvested in the morning when they are freshest. As soon as the petals are gathered, they are added to a mixture of spring water, organic cane sugar, and a dash of organic lemon juice and cooked down to a rich syrup. It is often used as a sweetener in tea, water or an Indian lassi yogurt drink. This Rose Syrup is also a wonderful compliment to ice cream, shaved ice, crepes, cheesecake or panna cotta, white wine, champagne and cocktails.
