2007 Con Sur Limited Release Riesling

This is a great relatively dry Riesling from Chile 's Bio-Bio Valley. It has refreshing floral and citrus notes on the nose followed by notes of citrus, green apple and pear on the palate. It's light and easy drinking with lively acidity. Great just sipping on the porch watching the flowers come up or great with sushi, roasted turkey, or chicken salad.

2007 Terrazzo Esino Bianco

This light, fresh Italian white is made from a blend of 80% Verdicchio and 20% Trebbiano grapes. It comes from the Marche region off of the Adriatic coast. The nose has a subtle sweetness to it with notes of peach and citrus fruit. It's dry, but light-bodied with refreshing notes of citrus and vibrant acidity. Great with shellfish, fennel and blood orange salad, or a fresh Caprese salad.

2006 Fetish Field of Dreams Barossa Valley Moscato

This great Australian Muscat is modeled after the famed Italian style. This super-refreshing sweet white is made by well-known winemaker Wayne Dutschke. It is made in the frizzante style, meaning that it is half-sparkling. It has gentle effervescence. It is wildly perfumey and tropical on the nose with notes of peach, pear, and citrus on the palate. This is not quite as sweet as the Italian counterparts, but still just sweet enough. Spring Recipes

Fennel and Orange Salad

2 pounds fennel bulbs
3 to 4 oranges
1/4 cup good olive oil
2 lemons, juiced
Kosher salt
1/4 teaspoon freshly ground black pepper
2 ounces arugula

Cut the fronds from the fennel bulbs and reserve some of the feathery leaves for later. Cut each fennel bulb in half and remove the cores with a sharp knife.

Fit a food processor with the thinnest slicing blade. Cut the fennel bulbs into wedges and place horizontally into the feed tube. Process in batches. Peel each orange, remove the pith with a knife, and slice. Set aside.

For the dressing:

Whisk together the oil, juice, 1 teaspoon salt and the pepper in a small bowl. Place the fennel slices, oranges slices and arugula in a large bowl. Pour the dressing over the salad and toss together. Sprinkle with salt and add some fennel fronds for decoration.

Grouper with Tropical Salsa

2 cups cubed mango
2 cups cubed pineapple
2 cups cubed papaya
1 cup diced roasted peppers
1 bunch diced cilantro leaves
2 limes, juiced
2 tablespoons diced jalapenos
2 tablespoons olive oil
8 to 10 ounces grouper fillet per person
Cajun spice, for coating
Mixed greens, for serving

To make the tropical salsa: Mix all ingredients except oil, grouper and Cajun spice. Let sit while you prepare the grouper.

To make the grouper: In a cast iron frying pan, heat olive oil until smoking. Coat both sides of grouper with Cajun spice. Place coated grouper in pan. Cook for 2 to 3 minutes per side (depending on thickness) until done. Transfer grouper to a serving dish, placing on top of mixed greens. Spoon Tropical Salsa on top of fish.

Chicken with Mango BBQ Sauce

2 tablespoons olive oil
1 onion, diced (about 1 cup)
1 red pepper, diced (about 1 cup)
3 cloves garlic, coarsely chopped
1 teaspoon salt
Freshly ground black pepper
1/2 teaspoon ground allspice
1/3 cup red wine vinegar
3 tablespoons molasses
2 tablespoons Worcestershire sauce
2 tablespoons lime juice
1/4 cup low-sodium tomato sauce
1 mango, diced (about 1 1/2 cups)
2 to 3 jalapenos, minced
2 boneless, skinless chicken breasts (about 3/4 pound each)

Heat the oil in a medium-sized skillet over medium-high. Add the onions and cook until translucent, about 2 minutes. Add the red peppers, garlic, salt and pepper, and allspice and cook for 2 minutes more. Stir in the vinegar, molasses, Worcestershire sauce, lime juice and tomato sauce and cook for 1 minute more. Transfer the mixture into a bender and add the mango and jalapeno. Blend until smooth.

Put 1 cup of the barbeque sauce into a sealable plastic bag with the chicken and marinate for 1 hour.

Preheat the broiler. Put the chicken on a broiler pan and discard the marinade. Broil the chicken on high for about 12 minutes, turning once. Let the meat rest for 10 minutes before slicing. Spoon about 1/2 cup of barbeque sauce over the meat slices and serve.
