UNUSUAL BEER STYLE of the MONTH




“SAHTI”

Sahti is a rustic Finnish beer style that has been brewed probably since 9th-10th century. Made from a variety of grains, malted and unmalted, including barley, rye, wheat, and oats; the mash is filtered through juniper twigs through a trough shaped tun called a kuurna in Finnish . Sahti is also referred to as being turbid, because the wort isn't boiled after lautering (separation of spent grain and liquid), leaving loads of proteins behind, thus providing tremendous body. Finnish baker's yeast creates a cloudy unfiltered beer, with an abundance of sediment. Traditional Sahti is not typically hopped, so the task of balancing is left up to the juniper twigs, which impart an unusual resiny character and also act as a preservative. Some have compared Sahtis to German Hefeweizens, though we find them to be more akin to the Lambics of Belgium due to the exposure to wild yeast and bacteria, and its signature tartness.

KATAJA-0LUT (Lammin Sahti Oy, Lammin, Finland)

Pekka Kaarianen who single-handedly revived the juniper-laced Sahti style in 1990 created this variation of the Lammin Sahti by replacing the Finnish Baker's yeast with a regular ale yeast. In addition, Lammin Kataja Ale is boiled in the brew kettle for some 60 minutes. Both adjustments have been made to create a variation of the original Lammin Sahti with a very robust shelf life of over 12 months.

Dark orange in color, with peachy, citrusy and lemony notes on the palate . Rather big body with a dry, almondy finish. 8%abv

Maibock is the Spring bockbier. It's paler in colour than other bocks, and has a more pronounced hop flavor to balance the incredible malt complexity.

A great story…..

An odd feature of Einbeck, the town where this beer is brewed, and of which evidence also survives, was the use of a traveling brew-kettle, owned by the city and taken to each house in turn. Once the beer had been brewed, the citizens carried out their own fermentation.

We've been told that is why the houses have such unusually high arched entrances - to admit the kettle!!

Copper in color, hugely malty with a hoppy finish. Wonderfully effervescent.

“Heavy Seas” beer series from Clipper City Brewery, Baltimore, MD

Our Heavy Seas line represents our highest expression of the brewer's art. Each beer is bottled conditioned, intentionally leaving a small amount of live yeast in the package to naturally carbonate the beer. Bottle conditioning also adds subtlety and complexity, allowing the beers to evolve over time (within reason), not unlike fine wine. Each also represents a very robust style- usually in excess of 7% ABV. Grab one of these extrAARGHdinary beers and embrace your inner pyrate!



Loose Cannon Hop3 Ale

Red Sky at Night - Saison Ale

This beer is brewed in the Belgian Saison style (country farm house ale). A potent yet delicate ale, brewed with a unique Belgian yeast which develops a spicy, fruity flavor. Enormously complex.




Small Craft Warning Über pils

Malts: German Pils and Carapils
ABV: Approx. 7.25%

We call this beer an Über Pils - a pilsner style bock lager. Rich, malty, and well rounded but with a firm structure of noble hops. Surprisingly pale in color for such a powerful, complex beer.
